Where smoker capacity, not budget, becomes the limit

At thirty people the constraint quietly changes. Three pork butts is 24 lbs of raw meat, and that needs a 22-inch smoker minimum — on anything smaller they won't fit without stacking, and stacked butts cook unevenly.

Measure your grate before you shop. A bone-in butt takes roughly a 10-inch square of surface, so three of them want about 300 square inches with airflow between them. If you're short, split the cook across two meats with different timings rather than cramming.

Thirty is also the point where a two-meat spread starts to read as generous rather than indecisive. Two butts and two racks of ribs land in the same place as three butts, cost about the same, and give people a choice.
