The awkward one — and why sausage fixes it

Twenty-five is the classic backyard number and it sits annoyingly between cuts. Two pork butts give you about 8 lbs of pulled pork — just barely enough alongside good sides, and clearly thin if the meat is the main event. A third butt overshoots badly and costs you another 10 hours of smoker space.

The fix every pitmaster uses is sausage. Two butts plus four or five pounds of links covers twenty-five comfortably, costs less than a third butt, needs no extra planning, and fills the spare rack you already have. Sausage also barely shrinks — it keeps about 90% of its weight, against 50% for pork butt — so it's the most weight-efficient insurance you can buy.

Twenty-five is also where a second side dish stops being optional. Half a pound of sides per person is about 13 lbs of food; one tray of beans won't get there.
